I'm back from dinner. I did indeed have a celebratory salad with thousand island dressing. I'd forgotten how crisp fresh salads can taste. Delicious! I also had a rueben salad, which has also been off-limits for me because of the sauerkraut. That was one tasty dinner.

I never, in my wildest dreams, would have imagined that I'd miss salad...

I'm so sorry you cannot have leafy greens more often, but sounds like you celebrated your salad-intake day with some tasty choices!
